Comming back from Stockton you can drive south on 5, 152 west to 156 which becomes 25 south and then out to 101 San Louis Obispo very nice ride and I just did this also from 101 south just few miles south of San Louis Obispo exit 166 east to Frazer Park, that is very beautiful MTN. road trip.

I like HWY 1, can't find any better view it is much slower but lots of small towns to stop and eat

If it were me, and I had time...I would head over Tioga Pass on the way home or at least down through Mariposa and Oakhurst. There's a real nice little Inn in Fish Camp called the Narrow Gauge Inn. Or go to California Hot Springs and/or Johnsondale, Roads End.

I was just up in Bass Lake last week--near Oakhurst. There are lots of great easy fire roads through the forest that you can do by yourself without worrying about getting stuck. Note there is still snow around 5000 ft. in the shade. We came across some 4-5 ft. drifts across one trail around 11 at night which quickly became the turnaround point. Narrow Gauge Inn is great. There are lots of other hotels in Oakhurst as well.
