I've searched everywhere (either it's not here or I'm stupid).

What do I have to do disconnect the 3rd brake light wire (short of cutting it)?
Anyone know if the disco is in the tailgate or the upright post holding the brake light?

I'll cut, but I wanted to know if there was a right way 1st.

It's in the upright post. Actually it's a quick connect directly to the light assembly. Just disassemble it and you'll see it.

The rest of the wiring has a plug inside the tailgat. I don't remember exactly where, but I just unplugged mine there when I took it off.
