Default Code P0430 - Does this make sense

So I've been getting code P0430 on and off for the last 6 months on my 07. It is Catalyst System Efficiency Below Threshold (Bank 2). I finally decided to pay for a diagnostic and get the cats checked by an exhaust shop. They found 3 of the 4 O2 sensors not reading. Paid and had them all replaced. Jeep is running better, at least I think it is. About 2 miles down the road the code came back. I called the shop and was told to drive the jeep for 4-5 days and let it adapt to the change. Now this doesn't make any sense to me but i am no mechanic. You all ever hear anything like this?

I can clear the code at will but am leaving it alone to see if it does go away. I saved $700 over the last year for new cats and now I'm out $500 of that.

If it is indeed fixed by replacing all the O2 sensors, it will take three good trips for it to turn off the light by itself.
If you clear it yourself, it can take two trips to turn the light back on if it's still bad.

I replaced all 4, one was PITA, and it took a day or two for it to go out
