First time in snow.. wheel hop?
I thought the stock Rubicon tires were terrible in snow? The mud terrain ones? Were you wheeling with the ESB on?
I went with the BFG all terrain, upgraded from the X SR-As and have never had any problems. I'm in Utah as well and as I watched others in cars and trucks try and fail to drive on the snow over the past few months, my Jeep felt like it was driving on velcro. Not one problem.

Traction control can really piss you off tho. Have you completely disabled it or just pressed it once? As doing that will only partially disable
Just hitting the button is partial off here is how to completely disable it.(not partially). its in the manual. this completely turns it off ... do it again to turn it back on you have to do it exactly as it says for it to work.. it will flash esp off if you do it correctly and display the wavy lines all the time..
1. Place into 4H
2. turn jeep off then on (actually start the jeep)
3. center wheel
4. turn clockwise so JEEP is upside down at 180 degrees
5. press and hold esp for 7 seconds (at 5 secs you will hear one chime) now depress the esp button keeping the wheel in the same position hold 7 seconds. you will hear another chime.
6. recenter wheel
7. turn counter clockwise till JEEP is upside down.
8. Press and hold ESP for 7 seconds (at 5 secs you will hear one chime) now depress the esp button keeping the wheel in the same position hold 7 seconds. you will hear another chime.
9. Recenter wheel
10. Press and hold ESP for 7 seconds. then depress until you hear the chime.
11. Turn off Jeep
1. Place into 4H

thats got a light bulb going.. i dont think it hops in low range ( with all the control systems off ) so next time im out im going to turn everything off i can and see what happens. i might not ditch the jeep quite yet.
Well chalk tested or not, its hard to say its improper tire pressure when he has 60k miles on them and they are wearing good. I too run 35-37 PSI in my stock rubi tires/wheels on the road, which seams to be about the perfect pressure for me. I only have 5000k miles on the Jeep, though, but they are not cupping or wearing funny at all yet.

To the original poster, I too have experienced wheel hop in my Jeep ('12 unlimited rubi). I have only driven in the deep snow once so far with this Jeep, but it did hop from time to time. I will be heading out to an off road park this weekend and will report back if wheel hop was an issue or not.
I installed an ESP kill switch, so I can turn it off/on quickly and easily. I will try to see if it makes any difference with wheel hop if the system is on or off.
I was on top of 18" or so of old snow packed hard by snowmobiles, and dropped through. It was too deep and hard to climb out of, so I used 4-low and the lockers to claw a path back out of it. I had to take it easy because as the tires chewed at the "snow wall" she would want to hop pretty good. There was no getting out of my tracks to turn around unless I had used the winch.
So I think if you are in snow hard enough and high enough that your mudders have to chew through as they try and fail to climb over, yes you can get it hopping especially in 4-lo locked. It does not help if it is deep enough that you are pushing your frame/axles through it too.
On the other hand, my Ranger with a total of 7" of body/suspension lift has done about the same thing if the tires/axles got into the same dense hard snow.
It sounds like the OP probably knows all this, but I don't know what else would cause it.
