This is going to be a tough size to find. They don't make a 255/75/16 in a Goodrich of any type. In a 17", yes.
Your choices on either side would be a 245/75/16 (30.5") or a 265/75/16 (31.6"). I'm running 265/75/16s on my JK right now. I like the size, but I'll go to 285/75/16s (32.8") once these wear out.
Keep in mind that a JK can run up to a 32" tire stock, wheeling hard, with no rubbing. I've heard of some that run 33"s stock, but I'd research that a little before I planned on that one as I'm not sure about all of the issues that people have encountered with that.

You're likely not to find them in anything but a 10 ply. Good luck. That'll be a rough ride.

I would do the 265/75/16, that is what I am planning to do mainly because I am not going to do any lift for a while and these will fit without any issues. Plus you will find a bigger selection in this size.

He's spot on. BFG doesn't make the All Terrain T/A KO in a load range D (8 ply) tire in that size. You'd need to bump a size to the 265/75/16 to get away from the load range E (10 ply) tire. An E tire is going to beat the crap out of you because it's built to handle heavier loads than you JK will likely be carrying.
Also, what wheel/tire combo do you have on it stock? Most of the JKs that I see running around have 32" tires on them stock. They are street tires, but they are 32s. It's going to look a little odd to pull that large of a tire and then go with a 30.5". Since you're going with 16s, I'm guessing you have the stock steel wheels? That's what mine came with, and I debated between 245s and 265s. I decided on the 265s and I'm glad I did. The smaller 245s don't fill the wheel well and look a little on the goofy side. Kinda like if Shaq wore a size 7 shoe.
If you want to see a JK with 265s, click my "project JK Gallery" link on the left. Any of the pics with black wheels are after I bumped up. Pics with the silver wheels are stock 225/75/16.

I'm going with the 265s on mine, simply because I want to remain with a stock size and because I don't want any power loss issues. I have the 245s now. I figure that the dealer cannot gripe about me running a size that could have come on it from the factory. I will of course let them reprogram the speedo when I change.

considered 265's but was afraid of rubbing since there is no lift, i will be installing these tires on 16x8 dick cepeck dc1 black wheels, not much offroading at all mostly highway, 20 miles to work and back, but i want a good tire if the need arises, i may be looking at too much tire for the use it will be getting
