One thing I dont know if yoj do or not but you Should is Remove the membrane from the underside that covers the bones. It is a pain but will help achieve tenderness. Use a butter knife to gain a grabbing point the pull it off. Some say you can do it wigh a paper towel but I have yet to get that to work.

I also forgot to add to my post that I spray my ribs with apple cider vinegar every hour while they are cooking. I don't know the chemistry behind it, but it really helps to tenderize the meat and adds a very very slight sweet taste to them.
I like using fruit wood of some sort for smoking ribs (pork in general) between that and the apple cider, most people that eat my ribs don't even put sauce on them.

Yeah I pull it. Don't have to worry about it with the country style ribs as I guess technically they aren't ribs. When feeding 10 adults and a haut as many kids it seemed the cheaper way to go. Thanks everyone for the tips some I k we some I didn't and will try on the next rack of ribs I cook
On a side note anyone ever do beer butt chicken I use apple juice and garlic in a soda can instead of beer now. A person wouldn't think it would make a difference but the apple juice steam seems to flavor the chicken just a hint of sweetness

I tried his method of cooking ribs and they were awesome!!!
Total cook time was approx. 6 hours and I don't remember how many beers.
Quick pic of first hour and smoke.
5 hours later I took them out of the smoker and removed the foil. Then on the BBQ, on low for roughly 1 hour and basted with BBQ sauce for the finisher.
I tried his method of cooking ribs and they were awesome!!!
