Apparently, according to my Saturday morning Fishing-Show fix, you can't go wrong with Darryl Cronzy's Breading and Batter mix

Darryl drives me nuts, but the batter looks pretty tasty

I used to just fry it up in bacon fat after the fillets were rolled in a flour, salt and pepper mix.
AWESOME!

Ok, I got a weird one for ya. After fishing lake of the woods for years and enjoying the guides own egg and cornflake crumb deep fat fried filets I decided to try something different. I use a broiler bag to cook the walleye (next to not in the open fire) and then use a simple concoction of Coco Lopez mixed with cayenne pepper. Anyway I like it!

Eggs, Saltine crackers, butter, S&P.

Depending on how you like your crackers you can just crumble or put them in a blender. I like them a bit corse.
Dip the filet in the egg, salt and pepper, roll in crackers, fry'em in butter.

Dang now I'm hungry.

Just some seasoning salt and a bit of lemon juice in a well greased pan.
