When they say they turn the rotors what they meen is shaving them down. I always buy new ones instead of turning. Alot of places claim you need them turned every brake job that is not true. Most real mechanics will tell you to take a dime and if you have a groove as deep as the lip of the dime then turn them. If they are warped they are out of shape and turning them just makes them thinner.

When you say you turn off the ESP every time you go offroad do you actually stop and hold the ESP OFF button for seven seconds until the odometer reads ESPOFF? If you just tap the button the TCS turns off (represented by the orange car losing control on your dash). If you don't hold the button the ESP stays on but the TCS disengages.
Edit: And no, I don't throw it back into 4HI and unknowingly ride around with the ESP back on lol
