Default 7.5 inch tires on 7 inch rims..
I believe I know the answer but wanted to bounce it off you guys and verify.

I have the stock Unlimited Sport 29" 16" tires. The rims are 7".


I want to go to a LT265/75R16, but it says the rim size is 7.5.

7" is an approved rim width for 265/75-16's

check out 255/80-16's those are a great size as well.
