Going SMALL for the STREET
I really don't like compromises. So to me the "street" jeep just doesn't make any sense. It's like keeping everything that's bad about a jeep and getting rid of everything that is good. And then you still end up with a vehicle that gets poor mileage, handles poorly, and accelerates poorly compared to other vehicles oriented to the street. And no offense but a lifted jeep on 28" street tires can't be the most asthetic thing on the planet either.
This does bring up a good point though. My stock rubicon does really well on the street in my opinions. I'm dying to lift it and put some 35s on. But right now it drives so well on the street (considering its offroad performance) that I haven't convinced myself to do it yet. I'm getting 19 mpg in mixed city/highway.

makes no sense specially if you have a second vehicle.

I just put the 35's on and my mpg went up about 1-2 mpg. I have told others this but they dont believe me. I have 4.10 with 6 speed manual and the thing seems to me to be geared so low that the 35's actually feel right now! 18 mpg and I spent my money on bigger tires.
I have the stock GY crappy 32's that look like street tread,, on the alum. 17" rims,, I've been getting about 19.6-20.5 mph around town and about 24 on the highway.. Your loosing more than you think going that small a tire with 4.10's.. You should try a set of the 32's that come on the x's with the s package when yours wear out.. The steel wheels are so heavy it offsets the weight savings of going with a light tire.. If you want real light get a set of centerlines. and some decent light truck tires,, not at's but summer looking tread.. Think stock width..
I am not sure that a tire that small is the rights size to get the best mileage but I don't know much. With a light street tire I would think you could get a taller tire and still get good gas mileage.
Not trying to be a "BLEEP". 1st I like what your trying here
. 2nd the jeep probably looks pretty funny with its new slippers in the Elantra parking lot. 3rd If your worried about 4 to 5 mpg why not just drive one of the Elantras and get 10 to 12 better mpg. The second time I played Mario Bros. pit crew on a nice Saturday fumbling 35s on/off the Hyundai would be driving the 16 miles to work. I'm in a 2 dr 07' and consistantly get 17.5 to 19.5 driving 76 mph on the highway with stock 32" moccosins on rubicon 17s. Not being lazy but 35" tap shoes are bleeping heavy to be throwing around 2-3 times a week

It seems to me this experiment was more effort than it's worth. If you already have an econo car for driving to work why would you not use it for that purpose instead of taking your jeep and trying to turn it into something it's not. I just think you had the best set up when you had two vehicles set up to do what they were designed for instead of completely changing the jeep. I applaud the effort though and it's your ride so do what you will with it, It just didn't make sense to me. Like somebody earlier said I'd still wave to you, it just might be with a confused look on my face.
