Back seat is down, I don't carry hot if I have someone in the back, Jus me in the jeep, I carry hot when I feel the need (buzzin down hwy no need for hot, unless some jackass wants me to pull over, by then,,, it's hot n in my hand). (In the city or on trail, HOT)
In Florida, the law (today) is that, without a concealed carry permit you must "secure" the gun in you vehicle. It does NOT have to be locked but it has to be in a closed container (not visable) such as a glove box, center console or closed holster. The exception for shotguns and rifles when traveling to/from hunting is you can have it in a gun rack in the rear window. With a concealed carry permit, you can also have it on your person. I have a Tuffy concealed carry drawer under my driver seat for those times when I can't carry (going into post office, bar, court house, school, etc). That way I'm always certain the do-badders won't end up with it.

(5) POSSESSION IN PRIVATE CONVEYANCE.—Notwithstanding subsection (2), it is lawful and is not a violation of s. 790.01 for a person 18 years of age or older to possess a concealed firearm or other weapon for self-defense or other lawful purpose within the interior of a private conveyance, without a license, if the firearm or other weapon is securely encased or is otherwise not readily accessible for immediate use. Nothing herein contained prohibits the carrying of a legal firearm other than a handgun anywhere in a private conveyance when such firearm is being carried for a lawful use. Nothing herein contained shall be construed to authorize the carrying of a concealed firearm or other weapon on the person. This subsection shall be liberally construed in favor of the lawful use, ownership, and possession of firearms and other weapons, including lawful self-defense as provided in s. 776.012

The most basic human right, the first mentioned of the "unalienable Rights" in the US Declaration of Independence is the right to LIFE. If you have a right to LIFE then it follows that you need the ability to protect your LIFE.

Anyone know of a holster that would fit inside the center console attached to the drivers side with the barrel pointed down and the handle aft, in a natural righty grab position?

I know exactly how you feel. It always shocks me a bit when the "where can I mount my gun" threads come up. Kinda "dangerous"...like a spy movie kinda feel!! Hard to describe.
To you USA'ers...seriously, do you like live in dangerous areas or need to be in a constant state of defense? I have a shotgun locked up at home in case zombies start to roam the land, but other than that, I don't get it.

As an Texan living in Canada, I can say I really miss my pistols (.22 Baretta Neos and a Rock Island .45) Canadians really don't understand the gun thing, but I always appreciated my right to carry a firearm and defend myself and my family. Now, I just follow Teddy's advise - walk softly and carry a big stick.
In Alberta pepper spray is considered a deadly weapon and is illegal.
All that being said - I'm not a real fan of the under sterring holster, or even keeping my pistol between the seats - I'd rather have it just under the front of the seat or concealed just behind the seat or between the weat and door - I hate visible firearms in vehicles...

Gun pointed towards passengers?! Tim, I can only imagine if you ever had to pull/use that firearm in the heat of the moment...you should have the handle closest to you! Do you carry hot?
