Even with all these add ons you are unlikely to add more than 10hp. Also, keep in mind that all the gains will come in the upper reaches of the RPM band - like over 4000rpm. Also, without installing headers and a performance catalytic converter your "free flow" exhaust isn't doing much other than making noise.

from what i recall... and this may be internet b.s., but the 180 degree thermostat is to prevent detonation due to internal combustion temps. the stage1 is reported to have a noticeable gain in off-idle response and power. the stage2 is supposed to add to this. part of it's change is the fuel and ignition mapping. to prevent detonation, they suggest you use premium fuel and install the thermostat.

The Jet Chip is less money than a programmer. It also doesn't do all the things many programmers can do - such as adjust your speedo for different tire sizes and gear ratios or read trouble codes. I've had plenty of negative feedback about Jet chips, but almost all positive feedback from Hypertech programmers. I would stick with a programmer if you can afford it.
