Rubicon's and Sahara's come with 255's stock and I have seen 285 installed on them with only minor rubbing at a full turn and full stuff. So, I would go as big as you can as it will help fill in your wheel wells nicely. As far as wheel spacers go, so long as you get something high quality like Spidertrax makes, they will serve you well.

255's clear stock...a 265 is only 10 millimeter wider total, so it only sticks out another 5 mm...285's fit stock, and sometimes rub a little at full lock...but not enough for most to care, especially as a little turn out of the turnstops fixes it anyway.

A 285 mm section width is similar to an 11.5" section width tire...maybe ~ one and a quarter inches wider than the 255's....that's where the rub starts it seems.

For a 12.5 -13" section width tire....around a 1.5" spacer seems to work, etc....and that's with 35 - 37" diameter tires, which swing through a wider arc than the stock size tires when you turn, etc.

A 285/75/16 is only about 32" in diameter....the same stock diameter as the 255/75/17 tire option, including the Rubi, etc.

Hope that helps a bit.

No problem with the site. I think wider is probably nice looking. The real question is what do you like?

Fuel economy will likely go down in either case.
