Exactly. Every bolt on kit out there that I have seen has quite a few sacrifices for the money that they cost. A custom setup is great, but still bound to many constraints being a JK. I am with you that my next one will just be a buggy.

When I went long arm I ditched my Synergy center skid/crossmemeber for a PSC crossmember and synergy's "Budget" center skid plate. You can retain their full skid/crosmember by trimming the sides to provide clearance. However, after four years of struggling with the bloody thing (Blocks access to virtually everything and is a PITA to drop) I was happy to find an alternative.

That has never happened to me, so let's say never. Will you tow with your jeep? If so, how heavy and how often? I tow a small trailer + atv/motorcylce about once a month, but would like to tow a boat in the future.
Your answers all lead to a 2.5"-3" short arm lift--except for the higher speed in the dunes answer.

Higher speeds necessitate aftermarket axles, coilovers and air bumps, and they should include a full cage, race seats, and 5 point harnesses.

You may want to consider a 2.5" lift for 35s, do flat flares when you do 37s, and buy a RZR for go-fast dune driving.
