currently I have 2.5" lift and 315/75 and need to replace the tires since they are worn.

I am am debating going down in size, since I am towing a pop up camper now, that weighs 2500 dry.

Any thoughts on going down to 285/75/16....would it make that big of a difference towing?

I was looking at getting General Grabber AT2s.
