I use the Mobil 1 (Gold label and cap) and I change my oil every 5k. Since our Jeep isn't a DD this is between 4-8 months depending on season.
Actually I keep all my services on a 2.5/5k interval.

Lube the parts that can be lubed.
inspect fluids

oil & filter
silicone treatment on rubber parts
10k
clean/replace air filter
15k
diff fluid change
30k
transmission & t-case fluid change.
We just flipped 15k though....

I use Mobile 1 synthetic oil. I have 3500 miles on my last oil change and fixin to go get me another oil change in a few minutes. I change between 3000 to 4000 due to the hot weather we have down south Louisiana. I also do the same on my wife's Nitro.

Isn't the oil change indicator just tied to mileage? I've changed my oil around every 3500-4000 miles and had the indicator come up a week after the oil was changed twice. I thought it was set for 3500 miles after you reset it. If it were based off actual measurements or performance you shouldn't be able to reset it and have it stay off without changing the oil.
It's an algorithm that monitors "duty cycle".
It measures many parameters such as run time, rpm, load, fuel trim, ambient temps, time at operating temp, number of cold starts, etc. (the exact formula is a trade secret).
It expects you to use certified (SM or SN) conventional oil of the appropriate grade. And it's considered conservative so going over by 500 or so miles is no problem. Especially if using a top synthetic, in which case you could easily add many more miles, only a UOA can say for sure.
I see your OCI tracks nicely with your maintenance schedule, but if your usage pattern changes you would likely see a change in when the OCI warning appears. Some folks get the warning in as little as 2500 miles (happened to me once), others average 5-6k (me, usually) others go 10k or more.
Oil life monitors are a great tool that can be followed with confidence. The ones that show percent remaining are even better.
Just don't exceed your warranty maximums.
One caveat, the monitors are not very good at accounting for extremely dusty environments.
Use a decent oil filter, a quality oil, check the dipstick often, and follow the OCI. No worries.
A lot of good information has already been submitted but since you asked what others do I will share my thoughts.
I change oil and filter every 5,000/miles (as well as rotate my(5) tires) and have done so my whole life. Got that habit from my father who did it religiously and would easily put 300000 miles on his vehicles with all the driving he did before getting a new vehicle.
I purchased my first Jeep (CJ-7) new in 1982 and put almost 250,000/miles on it with zero engine trouble. I could still go between oil changes without having to add oil....but it was ready for it toward the end. Have driven other cars well over 100,000/miles using this same interval and have yet to have any issues even remotely related to oil changes. I know that with the internal "oil change counter" it can go up to around 8000 miles or so but for me that seems like a lot of miles between changes. I guess maybe I'm old school....or maybe just old.
For me it is easy .....every 5000 miles is easy to track and remember.

x2 on the Castrol usually on the high side of 3-5k. was using a quart to 1.5 between changes with mobile 1 though not bad for a 3.8l I prefer the 1/2 qt with Castrol.
I stand corrected! I had 3800 miles on my oil before changing it yesterday. Still had 6 quarts of Mobile 1 full synthetic oil in the crank case. Oil still looked like it could go to 5000 miles. Just sayin'......
