We picked up an Old Town Loon 160T. Its a polymer tandem kayak. We took it out to a bird sanctuary/wetland. It tracked really well and was pretty maneuverable. Especially for my wife slacking in her kayaking duties.
We've been really happy with our Carolina series boats from Perception. They have a few tandem models.

I have used Current Designs Caribou S's for years. I've had two for my son and me.
They're great in rough seas and for expedition kayaking. My son is now 17 and is quite comfortable in this boat.
For much younger than that I would recommend something much more stable. Good luck and God Bless.
