Looking for local places to go explore, is their a list somewhere?
Or how about local forest service roads that are open to jeeps?

In addition to the well known ORV parks there are miles and miles of forest service roads at the end of the Beckler River road off of Hwy 2, though sadly not as many as there used to be. Also a few here have been up on the power line trails off of I90 at the Cabin Creek road. Nothing too exciting but if you just want to get your Jeep dusty and see some scenic views they'll do.

I've never driven on the South side of Hwy 2, only the North. Anything interesting there? I pulled it up on Google maps and it looks like you can get to a huge reservoir from there.

I'd also recommend hitting up pnwadventures.com ...they're a good group and they know a lot of good runs. They run from totally beginner/stock rigs to some pretty advanced stuff. One of the first runs I did with them was up over Colockum pass and over Naneum ridge in the LT Murray Wildlife area. It wasn't real technical at all, but a good day completely off paved roads. Check out their 'Completed Trip Reports' for local spots (and afar). That's my shameless plug. I'm only a member there...I don't own or sponsor the site. It's just a good resource.
