Here is a great book to check out for trails. Most are rather easy but are very scenic.

I second that on Hungry Valley SVRA. That place is great. Not the most scenic in my opinion but a lot of fun.

If you're willing to drive up by Pyramid Lake, there's a place called Liebre Canyon that I found on dirtopia that's absolutely beautiful and very easy to go solo on.

Jmacaws is right about Santiago. Def a beginner run, but a nice local ride with great views of Lake Perris and the Temecula area. It was snowing when eharris and I got to the top yesterday.
