If you are going as far north as Monterey - The Monterey Bay Aquarium is awesome. A great lunch spot is the Monterey Plaza Hotel at a place called Schooners and you can eat outside right on the bay (prices are pretty reasonable too - i.e. $12 for a burger, sandwich) - food is great and the drinks were awesome.

Have fun!

Monterey and Carmel are both beautiful, as is Big Sur. The true trip however could be the drive home. If you go all the way to eureka ca, make the drive back on the 1. It adds a bit of extra time, but you drive the coast all the way down, on the cliffside of the mountain. The best drive in California. a trip in of itself and can be done on your last day. Also on the way up in SLO there is a wonderful little motel called the Madonna Inn... it has waterfalls and cave rock showers inside your room... super romantic!

Have a fun trip!

Hurst castle is pretty cool, and if i remember right there is some cool beaches with alot of cliffs too,......... can't remember which beach but there's alot of elephant seals up in the montery area? it's been a long long time since I've been in that neck of the woods. Not trying to change your trip, but have you all made it to Yosemtie and the soqua national forest yet? Thats an awsome trip too! Either way have a good one

"Hurst Castle" It was the home of William Randolph Hurst. Definitely a must see. Have a great weekend.

By the way. I personally would hate to have to go from LA to Eureka and back in just three days. You would barely have time to sleep and have potty breaks if you are driving a JK. Google maps says it's 12 hours driving time one way. Just sayin!

Hearst Castle is near Cambria, which has a lot of nice bed and breakfast places. It is also close to Paso Robles, which has a few nice wineries, if you are into wine tasting. The elephant seals are a little north of Hurst Castle in San Simeon. The drive is not too bad, either. It is about 4 hours to drive to Cambria.
