I did ask if they could switch one out of another vehicle since they had several sitting on the lot not going anywhere. They explained to me that each console was assigned to the VIN number of the vehicle and that it was not possible. The console also needs to be programmed with my mileage (around 603 miles now). The service manager said if it was possible that it would of been done.

Have you called Chrysler's 1-800 customer service number, yet? I would get them to pay one of your payments. Why make a payment on a vehicle that you can't even drive?
Also, I would drive it until the part comes in. Worse case scenario is that you do overheat it, and they can fix that, too.

Have you given any thought to performing the Actuator Test as outlined in post #12 ? That would tell you if the dealer is waiting for the correct part.
The gauge is not the only water over temp indicator. There is a ding, and an icon, too.
You could find some one with a Scangauge II or Aeroforce Interceptor Gauge, and see if the computer is seeing the correct water temp.
16. Engine Coolant Temperature Warning Light
This light warns of an overheated engine condition.
If the engine is critically hot, a warning chime
will sound 10 times. After the chime turns off, the
engine will still be critically hot until the light goes out.
