Default Possible sensor issue?

Long story short; I was driving my '13 JKS on the highway today and I noticed my Engine Temperature dropped from normal all the way down to resting position, a few moments later my engine started to sound a little unhappy. I pulled over and killed the ignition and checked all my fluids to make sure I wasn't in the midst of something too sh***y.
When I restarted my motor the gauge read normal and the sound had vanished.
Needless to say I'm hoping this just had something to do with the fact that the poor thing's been hauling me around in the midst of the prairie cold snap -30 Celsius but I'm just curious if anyone's had a similar issue? Or maybe knows what could cause it.

Haven't had it happen, but it does sound like a sensor. It could also be a communication problem. CANBUS systems like the one in are Jeeps are known for it. The least little voltage change really messes them up.
At work one of our large printing machines wouldn't run because some had unplugged a connector without powering down first. It put just enough carbon on the connector to confuse the machine.
Could be just a dirty plug.
