I'm sort of in the same boat as you except I want new wheels as well. I'm wondering will I need spacers to run 285/70/17's?

spacers on the 285 depends on tire mostly.
most 285 will not have any rub issue but the Goodyear Duratracs will rub slightly on track bar at full lock on most jeeps.
The 275 should not rub

I just put 285/70/17s on stock wheels and they work just fine. They are Nitto Terra Grapplers and only rub on really tight turns. Not a big deal--but I'm planning on doing a lift soon.

I have the same set up and got the same results. At full lock you'll get some rub but nothing to be overly concerned about.

This weekend I added Spidertrax 1.25 spacers all around. Zero rub and I think it looks a lot better, especially on the rear. The tires now just peek out from under the flares.

Typically, yes, but at worst a spacer lift or fender trim could fix you.

33's - will it rub without spacers?
yes at full lock on the plastic airdam. FIX, remove the plastic airdam

if you're not lifting your rig i say just rip that POS plastic air dam off. it does nothing anyways.
