Will the fill plug fit? Then use a temporary means for the fill plug. That'll just be basically keeping it from splashing out until you can get to the dealer

Why not get a friend to take you and leave your JK at home?

So I picked up a new plug (didn't drive there), but the hole in the housing is stripped Can something like this be tapped or do I need to replace the whole thing? I feel like this is going to be a costly mistake...The dearlership was of no help.

You'd be better off with just getting an aftermarket diff cover vs replacing stock

You might see if you can find a magnetic drain plug at a junk yard that is larger than the existing hole. Then take it to a machine shop and discuss it with them. I expect that they can drill and tap it.

If the threads are just pushed over you may be able to run a tap into it and clean up the threads. Otherwise you may have to either weld it up and re drill and tap it, or maybe tap it to the next bigger size and get a new plug. Not sure if there is enough meat there to go to the next size. You could just have it welded up and drain your oil with the diff cover from now on but I would save that for a last resort.
