i think the proscribed is 15k miles but some will do the front less often if they wheel less? I think 30k?

For me, it is simple and fast and cheep enough to do it myself that I do both every 15k.

I have a 2010, and it seems to have a drain plug on the bottom of each diff (I assume those are drain plugs). Did older JK's require taking off the cover? Should I take off the cover anyway so I can wipe out any gunk and inspect the gears?

From my understanding (second hand advice from mechanical engineer) it doesn't matter so much what oil you use as it matters how often you change it. Goes for diff fluid, engine oil, transmission, ect. As for me I changed my rear diff fluid at 15K miles. I do not use 4wd often so I held off on the front. I used Royal Purple, cost me around $35 and took about 15 minutes.

I called my normal shop and they told me to do it myself and then come in for them to look it over and sign off on the service (so I can keep my warranty on the up and up). I'm gonna head by autozone after work to get the gear oil and a new air filter. Stopping by my dad's place to do the work this weekend. Might also finally get around to doing the breather extensions while I'm under there.

No kidding... Luckily me and the wife commute together in her Carolla. The Jeep has become a magnet for accidents in DC lately Now the Jeep is for my trips after work and on the weekends. She got me a framd picture of my Jeep to keep on my desk so I don't miss it too much
