I'd put the cover back on and just hand tighten the bolts. No need to torque them down at this time. With the diff fluid emptied, it shouldn't leak out the axle tub anymore. Just make sure it doesn't dry up. Since it'll be for just a while, you'll be fine. Just make sure there isn't any water moisture in there - don't want any rust build up inside 

I put the diff cover back on, but since I didn't bother to redo the RTV seal, so it is what it is. I then had a few quarts left of some crappy "Costal" brand 90W gear oil. I filled it up with that.
This obviously isn't oil I will run with, especially since the diff seal is compromised. But, the theory is that some oil in there while sitting has to be better than sitting dry. And i didn't want to waste $40 worth of Mobil 1, but thats whats going back in it next week.

If it's just sitting, what the harm? Just try to understand. I'll run out and drain it again if necessary, but this sounded like a good idea.

Oh... Did you catch that I need to replace my driver's side axle seal... Fun, fun.
No harm... in that respect, oil is oil. What I meant was that the gears will have enough coated on them (especially if it's not being driven) that it wouldn't have needed it in there. But if it's in there now, just leave it as is till you get ready to put the shafts in and just clean it out thoroughly then
