I was asking because some say to do it in the air with the ebrake pulled in a star pattern. Like the tire shops do when its on a lift.

it's done in the air so the tire does not bind on the ground and they are pulled tight against the mounting surface. The star pattern distributes the torque equally around the wheel - just like putting heads on an engine, if you don't tighten in a pattern you create unequal tension and end up with a head gasket leak.
if they are on the ground and you remove the nuts, the tire wants to shift away from the mounting surface once the tension is released and even though you torque them, they may not be tight (will loosen as you drive over time). So, it's best to remove all the nuts all at once raise the tire to clear the ground, put your new ones on in a star pattern until tight, set on the ground and torque to specs in star pattern.
