So when longer control arms are install, that angle is now (hopefully) more parallel to the frame/ground. This will lead to a smoother ride and improved handling on/off road. Unless the long arm kit has long shocks than it's short arm counter part, it will only flex as much as the short arm kit.

Does a coil over suspension system replace the need for longer control arms?

I'd go with Currie control arms. they have a Johnny joint on both ends. Very smooth operation and great articulation. Check with Davie @ Northridge! It's what I have and who I got them from
