AEV Maintains a certain caster spec at 2.5/3.5/4.5. The holes are not straight up-and-down and I've only read a few instances where somebody changed holes using the AEV Brackets. End result either too much or not enough caster angle. I wouldn't really call them adjustable.

Yes. The Rancho control arm drop brackets have only one hole. Caster angle ends up 3.5–4° @ 4" of lift and more at 2.5 .. 4.5– 5°.
There's no need to have adjustments. Lower lifts can run with higher caster. Higher lifts can not due to excessive pinion angle.

Love my drop brackets. I have a 2.5", so I have them set that way. I only trail ride. Coupled with low tire pressure I can tackle washboard roads like I never could.
