Here are a couple of pics of my 2011 JK rear seat with the headrests removed.

They (headrests) just pulled out while I held in the button.

I have taken the headrests off the back of my 2012. They are removable.

To remove headrests in rear on 2 dr JK you push in on the left button on each rest while using a screw driver on the right post inserted on the small slot towards the back and pull up on the rest to remove it, safety restraint I guess.

Still working on it. Hard to hold the front down where the wind can't get under it

2 doors and 4 doors have different rear headrests.

The 2 dr rear headrests are easily removed, the 4 dr has the folding non-removable type (anything can be removed with the right tools).

Interesting, you are right though. With the right tools anything comes apart.
