Aside from the breathers tubes for our differentials, isn't there a breather tube for the transmission as well? The differential breathers come up to about the top of OE tires, the back may be slightly lower. When I was playing around under the Jeep I also noticed that the tubes have a cap on top to help minimize inflow of water and dirt.
I have a 2.8CRD, never had any problems besides wetting myself when it started to float............
I always get out of the JEEP to see any changes in current because of big boulders under water. You don't want to meet them and have to go backwards in strong current

OK. Here is a pic at Coney Creek from when my Jeep was new and stock. I went in too fast took a wave up over the top. Killed it. Winched it out. Tipped it up, let the water run out, checked the intake (i little water), waited bit then started it up. No problem.
The bow wave is key. Slow and steady. I now walk across whatever I'm crossing first to check for boulders, holes, etc.

i'd think around 150 psi or so,
