I have the 2.5" coils. Gave me 3.5 in the front and 3" in the rear. Right now I am bumperless in the front and it's 3.75". 55-lb bumper in the rear plus spare of about 80lbs. I did not change my DS yet but I did do the exhaust spacer.
If you take it off-road, it won't matter which coil you go with. It's the "extended" length that matters. The 2.5" are only slightly shorter when fully extended and both the 2.5" and 3.5" will fully extend the ARB shock. When fully extended, the drive shaft will be resting heavily on the exhaust.

I can tell you from my own experience that the 3.5'' MC lift is fairly tall. It's quite a bit taller than a friend's 4'' lift. The taller you go the faster you'll need to replace that driveshaft. Even with a 2.5'' lift I'm quite sure you'll get a good amount of lift out of it. You could even run 37's with some flat fenders easily on the 2.5''. Just some food for though.

If you get the 2.5" coils and the 3+" it gives you are not enough, you can easily swap them out for the 3.5" coils for about $320 and sell your 2.5's. It just depends on how much weight you have on your bumpers, but you'll definitely get more than 2.5".
